YARMOUTH (WGME) – A chef in Yarmouth is opening a new restaurant aimed at thriving through the pandemic.

Two more deaths, 201 new COVID-19 cases in Maine

Chef Christian Hayes had to temporarily close his other restaurant, The Garrison due to the pandemic.

He also runs Dandelion Catering Company, that is temporarily on hold.

He says he’s using what he learned from his other businesses to pivot and open what is now Thoroughfare, a curbside-only restaurant focusing on indulgent fast food.

“When this space opened up, it was sort of now or never, do or die, just, you know, play offense rather than sit around and play defense, so we snagged this and set it up DIY,” Hayes said.

“It’s super special because in this field, it’s dying, every restaurant’s struggling,” Thoroughfare Chef Jonny Thayer said.

Hayes says through this transition, he was able to keep his core staff employed.

Thoroughfare is now open on Main Street in Yarmouth, and hopes to have delivery service up and running soon.
